toffee crispies

i’ve never made these before and didn’t realise how simple they are to make. there was a really easy recipe on the back of a packet of mini marshmallows.

125g marshmallows
125g butter
125g toffees
125g rice crispies

melt the marshmallows, butter and toffees together gently, regular strring needed, followed by boiling for 1 minute. then fold in the rice crispies and leave to set on a non-stick baking tray. how easy is that?! they taste pretty good and they could be enhanced by adding mini marshmallows as you fold in the rice crispies. or you could add chocolate chunks or raisins or smarties or buttons or…?

lazy baking

did a bit of baking at the weekend. i rarely stray from a simple recipe my mum told me for sponge; equal parts of flour, margarine, sugar with an egg thrown in, mixed and thrown in a tin and baked until it looks like a cake! i know it’s lazy but baking is so fiddly and precise that you can’t play around with recipes too much. i prefer to cook and create/make up/play/test as i go along. baking doesn’t let me do that. at least i can try and make things looks pretty, underneath a nice picture of iced cakes with colourful toppings is the same ordinary no frills recipe.
